Restaurants with no dining room

A ghost kitchen cooks for the delivery apps and nothing else. There is no host stand and no tables, just cooking units, a packing area and a shelf where couriers collect bags. Several brands can share one building, and some kitchens run a second virtual brand out of the same line. With orders arriving almost all day, dirt builds faster than in a regular restaurant kitchen.

Napa Janitorial looks after the shared parts of those operations and cleans individual units on the schedule each brand picks.

Delivery-only cooking in Napa

In Napa, delivery orders come out of more than one kind of kitchen.

The format keeps showing up in the same places: shared commissaries, restaurant kitchens that run a virtual brand after hours, and small units built for pickup. Each of them needs cleaning that fits between the rushes.

Turnovers between rushes

Lunch and dinner peaks leave short gaps. We plan around the slower hours, usually mid-afternoon and late night, and work the shared areas in a fixed loop: packing tables, common sinks, the main floor path, the trash and recycling room, then restrooms and the staff break space.

Overnight visits take on the heavy jobs: degreasing walls and equipment fronts, scrubbing quarry tile or sealed concrete floors, clearing floor drains and washing mats. Units that book their own cleaning are done in the window their brand chooses.

Packing tables and the courier shelf

The packing line is where a delivery brand’s reputation lands in the bag. Packing tables, label printers, bag and container shelving and lid bins are wiped free of sauce drips and crumbs, and the floor under the line is mopped so cardboard scraps and film do not collect beneath the counter.

Courier pickup shelves, order screens and the area where drivers wait see constant foot traffic. Shelves, glass, door handles and kiosks are cleaned, entry mats are vacuumed or rotated, and the floor gets a wet clean so drivers do not carry grime back toward the cooking area.

Cold storage and drains

Shared cold rooms have their floors, gaskets, handles and shelving cleaned on a set schedule, with every brand’s product moved and returned to its spot. Spill-prone shelves are wiped so one brand’s sauces never drip into another’s prep containers.

Floor drains are flushed and their grates cleaned so standing water and odor stay away from the packing area.

Shared kitchens and restaurants

Some buildings rent both delivery units and hourly stations under one roof. The hourly side has its own changeover needs, covered on our shared kitchen cleaning page, and both can run on one plan. A brick-and-mortar restaurant with a dining room is covered by restaurant and commercial kitchen cleaning.

Restrooms, lockers and break rooms are cleaned and stocked every visit. Crews are background-checked, and supervisors complete quality inspections and follow up with the site manager.

Each brand’s unit, its own checklist

Brands that add their own unit to the plan choose what is done and how often. A unit checklist covers the cook line exteriors, the unit’s prep tables and sinks, reach-in and undercounter fridge fronts, shelving and the unit floor down to the drain, with food-contact surfaces cleaned and sanitized to the brand’s procedures. Units are cleaned only in the window the brand picks, so no ticket is held up mid-rush.

Because Napa’s delivery kitchens often share a building with caterers and other food businesses, each brand’s checklist sits beside a separate one for the common areas, and the two never blur. Supervisors check both on quality inspections and pass notes to whoever runs that unit, so a brand manager knows what was done without being there at night.

What sets the price

Pricing follows the number of units and brands, the size of the shared packing and corridor space, how many daytime resets you want, overnight floor and drain work and cold storage size. Porter coverage through the evening rush is priced as its own line; see our day and night porter services.

A few useful answers

Common questions.

When can a busy delivery kitchen be cleaned?

During the slower stretches. Quick resets happen between lunch and dinner, and the deep floor, drain and degreasing work happens overnight.

Is the spot where couriers wait part of each visit?

Yes. Pickup shelves, order screens, entry glass, mats and the waiting-area floor are cleaned on every visit.

Can each brand keep its own cleaning time?

Yes. Brands that book their own unit cleaning choose their window, and the shared areas run on a separate routine.

How does this differ from shared kitchen cleaning?

Ghost kitchens rent private units to delivery brands, while shared kitchens rent hourly stations, so the shared-kitchen routine centers on changeovers between bookings.

Do you sanitize food-contact surfaces inside the units?

Yes. Prep tables, cutting surfaces and other food-contact areas are cleaned and sanitized to each brand’s procedures on every unit visit.
